At my house, we are a chips and dips crew. I always have salsa in the refrigerator and chips in the pantry. At the store, I always stand on the salsa aisle, look at different kinds of salsas, reading the ingredients, and pick a different one almost every time.
A few months back, we decided to combine some of our favorite salsa ingredients to come up with our own salsa. Our goal was for it to not be too spicy, have lots of cilantro, and include tomatillos.
I will say that we are not always exact, but here is what we came up with.
1 handful Cilantro, or more if desired
½ White Onion
1 Jalapeno, deseeded and deveined
1 can Fire-Roasted Rotel – start with ½ the can and add to taste
Juice of 2 limes
Salt and Pepper (optional)
1. Chop all ingredients.
2. Add ingredients to blender or food processor. I add ingredients in increments. I start with the tomatillos, onion, and jalapeno. Once they change consistency, I add the rest of the ingredients and continue blending (or pureeing) until desired consistency.
3. Taste test! Add more ingredients, if needed.
