Are you in a lunch-packing slump and need new ideas? Try this Curry Chicken Salad. This recipe is full of great flavor, and the addition of curry powder gives it a surprising, but tasty, kick! We hope you enjoy!

Yield: 8 (1/2 cup servings)

6 – 4 oz Chicken breasts, boneless, skinless, cooked and diced
½ cup Sweet relish
½ cup Low-fat mayonnaise
1 tsp Curry powder
1 tsp Caribbean Jerk seasoning
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Splenda
1 cup Diced celery
Dash of Season salt
1 tsp Fresh cilantro, chopped

1. Place cooked chicken in large mixing bowl.
2. Add mayo and relish, fold gently.
3. Combine dry seasonings; add to chicken mixture and mix.
4. Garnish with fresh, chopped cilantro and serve.
