Pesto Goat Cheese Crostini

With heart health on our minds, let’s have a glass of red wine and try a new snack.

Make this fresh, healthy snack to enjoy along with your heart healthy glass of wine because red wine has its benefits in moderation. These are super easy to prepare and a great appetizer to enjoy with that special someone.

First pour that glass of wine, to let it breathe, while you make your pesto-cheese snacks. These will only take a few minutes and then you will be ready to enjoy them together.

Gather your ingredients:
• Nutty whole grain bread or a baguette
• Fresh basil
• Raw walnuts
• Shredded parmesan cheese
• Goat Cheese (the original without added herbs is best)
• Olive Oil/Sea Salt
• Chopped cherry tomatoes

Preheat your oven to 400 degrees. Slice your bread, about 1/4 inches thick. Lay the bread out on a cookie sheet and lightly drizzle with olive oil and sprinkle with a little sea salt. Bake until golden, about 10 minutes.

While the bread is toasting, chop your tomatoes finely, these will serve as the topping for the crostini, then set aside.

Now, to make the homemade pesto, start by placing a full handful of basil leaves into a food processor, dump another hand full of walnuts, shredded Parmesan cheese and just a dash of sea salt. Press the pulsing button while slowly drizzling in the olive oil. Stop and scrape sides often while also testing the consistency and taste. You may need to add more basil, walnuts or cheese, depending on how you want your pesto to taste.

Once the bread is ready you can assemble your pesto cheese snacks.

Take each crostini and spread with goat cheese, pesto and top with the chopped tomatoes!

That’s it! You are ready to enjoy that glass of resveratrol-loaded wine and the healthy, made from scratch snack. ENJOY!
